A sweet entry of cooked agave, consistent with nose. There is a nice subtle burn on tip of tongue. It just keeps getting better with the body - a medium body that coats well. The finish offers a nice numbing of the palate, but doesn't go very deep in the back. There is a vegetal agave lingering. A very pleasant experience overall. Well balanced throughout, with no one dominant characteristic. This is a fantastic bargain in the $30-39 price range. I would have guessed a much higher price. It may not be well known or a large company, but the thought and craftsmanship in which they put into their tequilas is evident. After tasting the Anejo and the Extra Anejo, I had to taste the base starting point. Aroma: A crisp and fruity nose. There's a nice clean agave scent with pineapple and raspberry. Initial Taste: Crisp agave and the aforementioned fruit. A touch of vegetal flavors as well. Body: A nice oily body for a blanco. You get all of the flavors on every part of your tongue. You get a lot of agave and the peppery notes really kick in as well to compliment the fruit. Finish: A nice, medium-long peppery linger. It's basically just a peppery agave flavor on the back of your tongue that last a while. Good finish to a very nice blanco. This blanco has the notes that explain why I like the aged ones so much...and it's very tasty as well. What stands out to me is the uniqueness of the flavors. The fruit mix is unique and it mixes well with the spiciness. Crystal clear color, nice body in glass. Initial nose is agave, with a little bit of black pepper and banana leaves, very "green" smell. Secondary nose has hint of cinammon and fresh-baked bread. First sip gives a little sweetness with some spice, and a little heat. The mid-palate gives me a vegetal taste, reminding me of cooked brussel sprouts or artichoke leaves and the touch of bitterness they both have. It has a rich mouth feel to me, just right. The finish gives a little more of the bitter/licorice taste, topped with black pepper heat. It feels warming going down, without any harshness or alcohol predominance. Don Pilar blanco is a beautiful expression, either as a sipper or a mixer for any tequila cocktail. I got this bottle at the Costco in Concord, CA, for $23, and my only regret is that I didn't buy a case of it.
